Heavenly!

At the suggestion of a friend, tonight we tried stuffed French toast. We love French toast around here, so it was a must. After mixing up our usual egg, milk, vanilla, and nutmeg mixture, I took a piece of bread and spread a layer of cream cheese on it. Then I spread apricot preserves on top of that and topped it with another piece of bread. I then dipped each side in the egg mixture for a few seconds and prepared it on the griddle as usual. No syrup necessary. Any jam or preserves could be used, and some said they've used pie filling. I'm thinking there is a new French toast casserole about to be born. Yum.
